Stuffed Celery with Bacon, Fruit & Nuts. Seems like that says it all, doesn’t it? But I do need to have a little more in my post to satisfy SEO (Search Engine Optimization).
I first made this particular stuffed celery during the holidays to have a more “healthy” choice during our Christmas festivities. We celebrate on Christmas Eve with our kids and grands with a scratch-made (almost) Mexican dinner, and then on Christmas Day we join with extended family and enjoy a spread of finger foods. Everyone who can shows up at my parents’ home–at various times, but ending up together around 4:00 pm or so–for munchies of the savory AND sweet variety–followed by a rousing game of WINNER–one for the littles and one for the not-so-littles (by age)–this is usually followed by games of Trivial Pursuit (where it’s Women vs. Men), Psych, maybe a favorite Christmas movie, and some football, of course.
So, I served the stuffed celery on a platter. Since I had so much of the filling left I formed it into a “cheese ball” and served it with Ritz Crackers. Yummy! More bang for your buck. Everyone seemed to enjoy it. I am so glad to share it with you today, because it gives me another opportunity to enjoy it. you could serve this with these Stuffed Cherry Tomatoes.
I just love me some celery. Speaking of which, next week’s post will be the best chicken & rice dish you have ever tasted. There is celery involved. I cannot wait to make it for dinner.
Stuffed Celery w/Bacon, Fruit & Nuts

Ingredients
- 12 celery stalks, cleaned, cut into portions
- 1/2 lb crispy cooked bacon, drained and crumbled
- 8 oz reduced fat cream cheese, softened
- 1/2 cup pecans, toasted in butter and chopped
- 1/2 cup Craisins, chopped
- 1 teaspoon of minced onion
- 2 tablespoons evaporated milk (or heavy cream)
Directions
- Step 1
- Cook bacon until crispy, drain on paper towels, then chop.
- Step 2
- Chop pecans and Craisins.
- Step 3
- In a small bowl, combine: Cream cheese, bacon, pecans, Craisins, minced onion, and evaporated milk. Stir to mix well.
- Step 4
- Refrigerate for 30-60 minutes so that the flavors mix well with each other.
- Step 5
- Clean celery and cut into desired portion size.
- Step 6
- To stuff celery, carefully spread cream cheese mixture into each portion of celery.
- Step 7
- Refrigerate until time to serve–keep chilled.
