How about some Coke Float Popsicles to celebrate National Carbonated Beverage with Caffeine Day? Yes, that is an actual thing. Seriously, who comes up with these food holidays? Sounds like a fun job, though, since you would obviously want to try lots of foods in order to properly name the days.
To find something to make for today’s post, I did a Google search to get recipes using Coca-Cola. It is actually my favorite carbonated beverage–and I usually do a mix of diet and regular–so it was a fun search. When I found this recipe I remember thinking that it would be a fun choice, and not your usual cook-a-hunk-of-meat-in-the-slow-cooker-and-pour-Coke-over-it kind of recipe. (Full disclosure: I did do that today with a Boston Butt.)
You don’t have to wait until a hot Summer day to eat these popsicles. My grandkids watched me make these Tuesday morning and kept asking if they were ready yet. I waited until yesterday to let them try these out and they thought they were “super yummy.” In the middle of November. Outside with their jackets on.
I think it would be great to try making these with a carbonated orange drink, because then it would be like a Push-Up or Creamsicle Float! Now that sounds like something I want to try next. I won’t post it, because you could just simply substitute the orange drink for the Coke in this recipe. Also, next time I might try something a little creamier for the “ice cream” portion. There are actually recipes that are made by just stuffing vanilla ice cream in your popsicle form and pouring your carbonated beverage into it.
Here’s a tip to remember when making these “floatsicles” (see what I did there?)–pour the amount of beverage you need into another container and give it a chance to de-fizz a little. You know how it is waiting for the foam to settle.

Coke Float Popsicles

Ingredients
- 1 can Coca-Cola
- 1/2 cup whole milk
- 1 tablespoon pure maple syrup
- 1/4 teaspoon vanilla extract
- dash of salt
- popsicle molds
Directions
- Step 1
- Fill each popsicle mold a third of the way down with Coke and freeze until mostly solid.
- Step 2
- Combine milk, maple syrup, vanilla and salt in a measuring cup with a spout.
- Step 3
- Pour the milk mixture on top of the Coke layer–about 1/3 of the way–and freeze until mostly solid.
- Step 4
- Fill the rest of the popsicle mold with Coke, insert your stick, and freeze until completely frozen. Don’t be surprised if a couple of your layers kind of “moosh” together.” To be extra sure they don’t, just let them freeze longer.
