This Low Carb Taco Quiche will be a recipe you repeat whether you are livin’ la vida low carb or not!
Sometimes while on keto/lowcarb, I get a little, well, bored. Meat and low carb veggies with butter are great and all. But sometimes I just want something different.
I’m not sure if this Low Carb Taco Quiche qualifies as super different, but because of its flexibility I think it qualifies as awesome.
How is it flexible you ask? Well, you can change up the protein. Have leftover chicken? Shred or cut it up and use that instead of ground beef. Don’t have cheddar but have Pepper Jack? Go for it. Want to try it for breakfast and use sausage sans taco seasoning for the protein? You go, girl. And if you accidentally grabbed the freeze dried small diced beef thinking it was the freeze dried ground beef? Well, that works too. (Actually, it was delicious!)
My point is, you can mix and match with this bad boy and you are likely to get amazing results every time. The recipe is so simple that you can have fun playing with it! I do, however, highly recommend that you use a homemade taco seasoning mix to avoid added yuckiness from the food manufacturer.
Like I said, you don’t have to be low carb to enjoy this Low Carb Taco Quiche. And if you’re not then you could pair it with Anna’s Cilantro Lime Rice. If you are low carb, likely you already know how to do the cauliflower rice thing!
Low Carb Taco Quiche

Ingredients
- 1 pound ground beef
- 3 Tbsp. homemade taco seasoning
- 6 large eggs
- 1 cup heavy cream
- 2 tsp. minced garlic
- 1 cup shredded cheddar cheese
Directions
- Step 1
- Preheat oven to 350 degrees. Grease a 9″ glass or ceramic pan (square, pie, etc.)
- Step 2
- Brown the ground beef in a large skillet over medium heat. Add the taco seasoning and stir well. Spread the taco meat into your prepared pan.
- Step 3
- Whisk together the eggs, cream, and garlic. Slowly pour this mixture of the beef.
- Step 4
- Top with the shredded cheese. Bake for 30-35 minutes or until center is set.
- Step 5
- Allow to stand for 5 minutes before cutting into servings.
- Step 6
- Serve with sour cream, sliced avocado, Cholula sauce, etc.
