I threw this Quick Caprese Snack Plate together for lunch one day. I have been wanting to have something Caprese for a while, which is the main reason that I grow basil in my garden. We also planted some cute yellow cherry tomatoes, which actually turn orange when they are fully ripe and taste amazing.
Thankfully, I had some pearl mozzarella in the fridge, which I had used in another recipe and I always have balsamic vinegar and olive oil on hand. All the makings for a Caprese salad, plus dashes of sea salt and peppercorn seasoning.
Caprese salad doesn’t take all that long to put together, but this one is even quicker since you are using pearl mozzarella–no slicing–cherry tomatoes and fresh basil from the garden.
I don’t know what else I can say about this snack plate, except that it’s all about fresh, it was a hot day, and this was the perfect mid-day meal/snack for me to have.
