Who doesn’t love a fresh tasty salad? Fresh spinach combined with the crunch of fresh celery, Granny Smith apple, and toasted pecans? Heck yes. Add some sweetened cranberries and a tasty viniagrette and you have a delicious and healthy side for your meal.
With the addition of grilled chicken marinated with olive oil and Mediterranean seasoning, I had a whole meal! You could add some crusty bread or crackers, as well.

Yummy, Healthy Spinach Salad
A fresh spinach salad with crunchy and sweet ingredients and the addition of grilled chicken for a delcious meal in a bowl.

Ingredients
- 5 ounces fresh spinach
- 3/4 cup chopped celery
- 3/4 cup dried sweetened cranberries
- 15-ounce can mandarin oranges
- 1 large Granny Smith apple, cut into bite-size pieces
- 1 teaspoon lemon juice
- 1/3 cup chopped pecans, toasted in butter
- Opt: feta cheese, grilled chicken breast cut into bite-size pieces
- 4 tablespoons olive oil or vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons white wine vinegar
- 3 teaspoons sugar (or honey, stevia, etc.)
- 1/8 teaspoon each paprika, onion powder
- 1 tablespoon poppy seeds
Directions
- Step 1
- Combine all ingredients and toss to coat salad.
I made the dressing separately so that I could get the amount I wanted without drowning my salad (ingredients starting with the oil).
