Bet you are wondering what a hypocrite pie is, right? Me, too. I got this recipe from a friend at church, but didn’t really get an explanation of the “hypocrite” part.
So Google was asked and here is what I found: “It’s called Hypocrite Pie because a layer of custard conceals the layer of cooked … fruit on the bottom, which contrasts so delightfully with the custard.”
Strawberry Hypocrite Pie

Ingredients
- 3 eggs, beaten
- 1/2 cup milk
- 2/3 cup sugar
- 1 teaspoon vanilla
- 1 quart fresh strawberries, cut up
- 2 Pillsbury Pie Crusts
- 2 tablespoons butter
Directions
- Step 1
- Place one pie crust in glass pie dish, trimming according to directions on package.
- Step 2
- Sprinkle about 2-3 tablespoons each of flour and sugar over the unbaked crust in the dish.
- Step 3
- Fill with cut strawberries.
- Step 4
- In a small bowl beat eggs, milk, sugar, and vanilla. Pour over berries. Dot with butter.
- Step 5
- Place the other crust over the pie and seal, according to package directions. Cut vent slits in center of crust.
- Step 6
- Bake at 400 degrees F. for about 40 minutes, or until crust is golden brown.
- Step 7
- Let cool before cutting (there will be a lot of liquid in the dish).
