Nina-Rose’s Chicken Salad is not just another chicken salad recipe. Sure, we have all added fruit and nuts, but there is also a little seasoning that you just won’t expect–Montreal Steak Roasted Garlic Herb Seasoning. Because the recipe called for garlic herb seasoning and the only one I could find was Montreal Steak brand. Thanks to my oldest daughter who requested the use of this recipe when I was preparing food for her baby shower–#4, by the way, and also her 4th son. Boy moms rock!
If I am remembering the series of events (and it’s possible that I am not, but I will edit later, if needed) my daughter’s friend (thank you, Catherine) from work made and shared this recipe and it was a big hit. And I don’t know Nina-Rose, but thank you!
Of course I would make it for the baby shower, and who doesn’t love mini croissants along with the chicken salad? That’s kind of a given around here. Simple, delicious handful of goodness right there. And so pretty all stacked on top of each other on a cute, galvanized metal, 3-tiered server.
FYI, we also had salt & vinegar and regular kettle chips, fresh strawberries, Fudgy Bonbons (with gold sprinkles instead of peppermint), sparkling strawberry lemonade…but I digress.
According to sources, one of the best things about this recipe is that you boil the chicken breasts. Normally, I would just pop those babies on my George Foreman grill and then chop it up, but the shredded, boiled (don’t forget to salt the water) chicken was, apparently, chicken salad heaven.

Ingredients
- 1 lb. boneless, skinless chicken breasts
- Mayonnaise, to taste
- chopped red grapes
- chopped celery
- chopped Fuji apple
- chopped pecans
- salt
- Montreal Steak Garlic Herb Seasoning
- onions (optional)
- sweetened dried cranberries (optional)
Directions
- Step 1
- Boil chicken in salted water until done. Let cool, then chop or shred.
- Step 2
- Combine chicken with the rest of the ingredients. Use your own amounts on each ingredient, according to preferences.
- Step 3
- Serve in croissants.
