You will recognize this dish but I have expanded the name of it to Eclair Dessert with Fudge Frosting–to distinguish it from all the other recipes for basically the same dish. My version replaces the canned fudge frosting with homemade–yes indeed–frosting. I just can’t even stand those canned frostings anymore. Maybe you like them, and that’s okay, but my preference is to just make my own frosting.
That being said, this dessert was pretty popular at Tupperware parties, which is where I first tasted it. I am sure that just about any home party where you invited your friends over to see a demo and then buy some cool stuff–like Pampered Chef, Usborne Books, Stampin’ Up!, etc.–is where you would find this dish. Exactly. Just a super easy treat for your party, because you probably spent all day cleaning your house, right? I kind of miss those get-togethers and most of them are done on Facebook now. Oh well. It is convenient and you don’t have to clean, make any food, and you can wear your PJ’s. But go ahead and make some dessert for yourself!
There are only a few ingredients to this Eclair Dessert, with only a few more if you make the homemade frosting. You will need to hide the graham crackers. Just make sure you have the whole box because you need the layers. Any leftover crackers may be shared, if you wish.

Eclair Dessert with Fudge Frosting

Ingredients
- 1 box graham crackers
- 2 small packages Instant French Vanilla Pudding Mix
- 3 cups milk
- 1 regular container Cool Whip
- FROSTING:
- 8 tablespoons cocoa
- 2 2/3 cups powdered sugar, sifted
- 8 tablespoons HOT water
- 8 tablespoons softened butter
- 1-2 teaspoons vanilla extract
Directions
- Step 1
- Mix pudding, milk, and Cool Whip. Line a 9 x 13 glass baking dish with graham crackers, then pudding mixture. Alternate layers, ending with graham crackers.
- Step 2
- Combine frosting ingredients, mixing well. Spread on top.
- Step 3
- Refrigerate for at least 3-4 hours so that the graham cracker layers soften.
