No wheat grinder required to make these hearty Blender Wheat Pancakes!
If you’re someone who believes in preparing for hard times by securing long-term food storage, then you likely have some kind of wheat kernels. I have a lot of hard red wheat kernels and, though I do have a wheat grinder, I like this recipe because I can go straight to the blender with it!
Hopefully you have a decent blender. Not that you can’t do it with the old-style blenders. But a higher powered blender (like a Vitamix or Blendtech or something) will give you better results. My mom made Blender Wheat Pancakes with her old Sunbeam blender so I know it’s possible!
I love a good, hearty pancake. But I think I’m the only one in my family that loves that. The rest of them love very light and flimsy cupcakes. Wow. That’s really judgy of me. I know. I just really like a stick-to-your-ribs pancake!
You can make your own buttermilk by pouring 1 Tbsp. of apple cider vinegar into a 1-cup measure. Pour in enough milk to reach the 1-cup mark and allow to site for 5 minutes before using. If your pancake batter is too runny, allow the batter to rest for 10-15 minutes. Then, if it’s still too runny, add 1/4-cup of wheat kernels and blend again. Just make sure you blend long enough to break down the new kernels. All blenders are different, so use your best judgement for length of time and speed. You just want to make sure the kernels break down so the batter will be smooth.

Ingredients
- 1 c. buttermilk
- 1 c. wheat kernels
- 2 eggs
- 1/2 c. milk
- 1 tsp. salt
- 1 tsp. baking soda
- 1/2 c. vegetable oil
- 1/4 c. sugar
Directions
- Step 1
- Put the 1 cup of buttermilk and the wheat in the blender. Blend on high for 3 minutes.
- Step 2
- Add remaining ingredients and blend on high for 2 minutes.
