My go-to cole slaw recipe is my Mom’s Creamy Cole Slaw. Well, I added the “creamy” to the name, but it is still hers. I judge every other cole slaw that I have ever eaten to Mom’s. It is simply the best, in my humble opinion. The only other one that comes close is the sweet cole slaw at Cattleman’s Steakhouse at Indian Cliffs Ranch in Fabens, Texas–they have pineapple tidbits in the slaw! Yes, that is a long way to go, but I used to live in El Paso, so it wasn’t far to drive out there–plus they have a small zoo. And it is beautiful out there in the middle of the desert.
This cole slaw is a great side dish to so many entrees–hot dogs, burgers, steak, pulled pork or beef brisket, ribs, the list goes on. Try it with some Corn Dog Bites.
And guess what? Today is my Mom’s birthday. She would have loved seeing her recipe highlighted in our food blog. And so I am posting this in her memory. I miss her, so I try to prepare foods that I remember from my childhood. Don’t be surprised if you see another one or 10 in future posts.
On that note, are you familiar with any recipe that might have included vanilla pudding or some kind of custard with fresh blueberries in it? Mom made this big bowl of something for dessert one time when I was in about 6th or 7th grade (in the 70’s). I remember that it didn’t turn out exactly as she had planned but I do remember it tasted really good! We ended up calling it blue goop. It wasn’t blue, but it was goopy with blueberries throughout.
Aren’t food memories fun? I have another one from that same time period. Definitely 7th grade, because I had Home Ec and one of our assignments was to cook an entire meal for our family. I looked through one of Mom’s cookbooks and found a recipe for Peppermint Pork Chops. Yes, really. I overcooked them and they were so dry and I am pretty sure that I used too much peppermint flavoring on them. Yikes. But Mom and Dad were very supportive. I don’t even remember what side dishes I served. Oh my goodness, I have come a long way from that.
If you’re in a bind, pick up a bag of Dole Southern Diced Slaw from your local grocery store. That’s what I did on Wednesday.
