Remember last week when I shared a copycat recipe for the Costa Vida Sweet Pork Salad? And I promised to post the other components of the salad? Well, here you go! Today’s post is all about those delicious Garlic Black Beans that are a must for this salad.
When I serve black beans as just a side to something else, I don’t usually do much to them. Right out of the can they are seasoned well enough. But let me just tell you, people, these beans are next level. So tasty that I will probably use this recipe the next time I just want to have some black beans in a burrito, or as a side to any number of Mexican dishes. The ingredients are usually in my pantry, except the tomato juice. But when I made the Costa Vida Salad last week, I had to buy a little 6-pack of tomato juice so now I have some ready.
Next Thursday you will get another installment of the copycat salad, which will be the Cilantro Lime Rice. Delicioso! And then there is just one more recipe–Creamy Tomatillo Dressing.

Garlic Black Beans

Ingredients
- 2 tablespoons olive oil (I like Goya brand)
- 2 cloves fresh garlic, minced
- 1/2 teaspoon cumin
- 2 cans black beans, rinsed & drained
- 1/3 cup tomato juice
- 1/2 teaspoon salt
- 2 tablespoons fresh chopped cilantro
Directions
- Step 1
- Combine olive oil, garlic, and cumin in a small saucepan. Cook over medium heat until garlic is fragrant.
- Step 2
- Add black beans, tomato juice, and salt. Cook until heated through. Stir in cilantro just before serving.
