Everyday Spaghetti. No, I do not eat it every day. I could because it is that good, but then what about all the other yummy dishes that I would be missing out on?
This spaghetti is super easy to make, and is made from things that were already in my pantry or freezer–remember when I mentioned shelf-cooking in my last post? That is a good thing right now, since most of us are under mandatory stay-at-home orders to ride out COVID-19. How about that virus? Can you ever remember such a time as this?
But let’s not dwell on that situation.
The spaghetti sauce is not from scratch. I like to use Classico Marinara for my base and then I add ground chuck and Italian or regular breakfast sausage (bulk). And maybe a little bit of chili powder. Get creative. You might even want to use some of that Mediterranean Seasoning that I shared last week.
Let me tell you about how I recently stumbled on a way to assemble my spaghetti that brought back a flood of childhood memories of how Mama and my grandmothers’ spaghetti tasted. Really. I don’t know why the process made such a difference, but it did and now this is the way I want to make my Everyday Spaghetti.
I brown the meat and then pour in the marinara sauce and let it simmer for as long as I need it to in order to do other things. Like prep a green salad. And cook the pasta.
I found a great way to cook pasta, by the way. Bring your water to a boil, then add some salt and then your pasta. Stir the pasta while it boils for 3 minutes. Cover the pot, remove it from the heat and let it cook itself for 10 minutes. BAM! Perfectly cooked pasta.
After draining the pasta, I pour the sauce in and gently combine it. You can serve it from the pot or pour it into a large spaghetti bowl. What’s so different about that? Well I used to just put the pasta in the bowl, pour the sauce on top and that was it. Sometimes the sauce-to-pasta ratio wasn’t very good once you served it.
I think Mama and my grandmothers figured that out a long time ago. I hope to come up with other cooking memories that I can share with you. What are some of yours?
