A few years ago, we were invited to a catered event downtown where we enjoyed a mix of sweet and savory foods served appetizer style. Those are always fun and you usually end up really eating as much as if you had eaten a full course meal. Am I right?
My favorite appetizer was this amazing layered meal-in-a-bite…or two. Depends on how many I might have sampled. I have no idea who the caterer was, so I couldn’t get any recipes but I knew that one day I would replicate this if I could only find somewhere to serve it. We don’t party much.
Yay for last week’s YMCA Annual Giving Campaign kick-off dinner! My friend was on the planning committee and asked if I would bring an appetizer. Well yes I will! And the venue was this cute local farmhouse-turned-event center where a BBQ appetizer would go perfectly.
Basically, you are layering cornbread, baked beans, pulled pork and cole slaw, served with a slice of pickled jalapeno on a pick. I ordered the cute “dishes” from Amazon. They are actually dessert sampler shooters that came in a pack of 40 with free spoons included.
I have shared the links above from the particular brands or recipes that I used for my version of the appetizers. The Thrive Life Pulled Pork is freeze-dried and already lightly seasoned, plus convenient because I only used enough for the amount I was serving. I did Google a BBQ sauce recipe that tastes the most similar to the Southern vinegar-based sauce we use here in God’s country.
I brought back 3 appetizers after the dinner was over. It would have been 5, but as I was walking out someone stopped me and wanted a couple to take home to their sister and her fiance.

Southern BBQ Shooters

Ingredients
- Krusteaz Honey Cornbread Mix
- Bush's Original Baked Beans
- Pulled Pork
- Cole Slaw
- 1 cup apple cider vinegar
- 3/4 cup Ketchup
- 1 tablespoon brown sugar
- 1 tablespoon honey
- 1 teaspoon Worcestershire Sauce
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Directions
- Step 1
- In a small saucepan, mix together vinegar, Ketchup, brown sugar, honey, Worcestershire sauce, red pepper, black pepper and salt. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Step 2
- Add just enough of this sauce to your cooked, pulled pork so that the meat stays together, but you don’t want it to be too wet. You will have sauce left over.
- Step 3
- Beginning with the cornbread, layer about a tablespoon each of crumbles, baked beans, pulled pork and end with the slaw.
- Step 4
- Place a slice of pickled jalapeno on a bamboo skewer and stick into the layers.
- Step 5
- Serve with a small tasting spoon.
